Roasted Celeriac with Garlic & Thyme

Ingredients

  • 1 large celeriac about 3 cups chopped
  • 3 tablespoons olive oil
  • 3 cloves garlic peeled & chopped
  • 1 tablespoon thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat the oven to 200C/400F degrees.
  • Peel and cut the celeriac into wedges or 1 ½ inch chunky squares.
  • Toss the cubes with the oil on a rimmed baking sheet and season with the salt & pepper
  • Roast for 20 minutes.
  • Remove and toss the celeriac in the pan. Sprinkle the chopped garlic and thyme over the celeriac and roast for a further 15 minutes.
  • Serve warm

Notes

Makes 4 servings as a side dish.
