Roasted Celeriac with Garlic & Thyme
A low carb alternative to roasted potatoes
Servings: 4 servings
- 1 large celeriac about 3 cups chopped
- 3 tablespoons olive oil
- 3 cloves garlic peeled & chopped
- 1 tablespoon thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
Preheat the oven to 200C/400F degrees.
Peel and cut the celeriac into wedges or 1 ½ inch chunky squares.
Toss the cubes with the oil on a rimmed baking sheet and season with the salt & pepper
Roast for 20 minutes.
Remove and toss the celeriac in the pan. Sprinkle the chopped garlic and thyme over the celeriac and roast for a further 15 minutes.
Makes 4 servings as a side dish.
