Ingredients

  • 6 hard boiled eggs
  • 2 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chives chopped
  • 2 tablespoons mayonnaise sugar free (home made preferable)
  • ½ teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper

To Serve

  • 1 teaspoon sumac optional

Instructions

  • Cut the hard boiled eggs in half lengthways. Scoop out the egg yolk and place in a small bowl. Place the egg whites on a plate.
  • Add the lemon juice, rind, mayonnaise, mustard, chives, salt and pepper to the egg yolks and mash until smooth.
  • Spoon or pipe the egg yolk mixture into the egg whites. Chill until ready to serve
  • Sprinkle with sumac to serve (optional). You could serve with chopped chives too.

Notes

Makes 12 stuffed egg halves.
