Keto Fried Okra Fritters

Spicy fried okra fritters are an easy recipe in under 30 minutes. Made with either almond flour or lupin flour they are a tasty appetizer or light lunch.

Ingredients

  • 2 cups okra chopped
  • 2 jalapeno peppers deseeded and chopped
  • 1 inch fresh ginger peeled and grated
  • 1 small onion peeled and diced
  • 1 large egg beaten
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder
  • ½ teaspoon salt

The Batter

  • ½ cup lupin flour can be swapped with almond flour
  • ½ cup almond flour can be swapped with lupin flour
  • ½ cup water amount may vary

To cook

  • 3 tablespoons olive oil

Instructions

  • In a large mixing bowl, add the dry ingredients and mix well.
  • Add the beaten egg and grated ginger and mix into a thick batter. Add the water in bit by bit until you have a thick and smooth batter.
  • Stir in the chopped vegetables and mix well.
  • Heat the olive oil in a large frying pan or skillet on a medium heat.
  • Using either a medium cookie scooper or a spoon, take about ¼ cup size of the batter and place in the frying pan. Press down with the back of your spatula to flatten and fry for 3-5 minutes each side until golden and firm.
  • Serve with a mint yoghurt.

Notes

Makes 8 fritters.
