Ingredients

  • 2 cups baby salad leaves
  • 1 medium star fruit ripe and yellow
  • 1 medium cucumber
  • 1 medium avocado

Salad Dressing

  • 1 teaspoon Dijon mustard
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon water
  • ¼ cup red onion finely chopped
  • 3 tablespoons avocado oil
  • 1 tablespoon lime juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • With a sharp knife, slice the edges from the star fruit.
  • Remove the top and bottom of the fruit and cut into ¼ inch slices.
  • Peel the cucumber and slice.
  • Remove the skin and stone from the avocado and cut into slices.

Mix the Dressing

  • In a small bowl, add the dressing ingredients and whisk until smooth.

Assemble

  • On a large serving place, layer the lettuce over the plate.
  • Place the cucumber, avocado and star fruit over the lettuce.
  • Drizzle with the salad dressing and serve immediately.

Notes
