No Bake Hemp Seed Granola Bars

An easy no bake granola bar for breakfast or a snack.

Ingredients

  • ½ cup hemp seeds
  • ½ cup pumpkin seeds
  • 1 tablespoon chia seeds
  • ½ cup coconut flakes unsweetened
  • 2 tablespoons coconut oil
  • ½ cup peanut butter softened at room temperature
  • ½ cup pecans chopped
  • 2 tablespoons erythritol I prefer brown
  • ½ teaspoon cinnamon

Instructions

  • Line a loaf tin (I used a 9 x 5) with parchment paper.
  • In a bowl mix all the ingredients together. If the peanut butter is a bit thick, zap the mixture in a microwave for a few seconds to soften it.
  • Press the mixture into the tin evenly.
  • Place in the freezer overnight.
  • Cut into 8 slices.
  • Keep in the fridge as they will soften at room temperature.

Notes

The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
