Grate the zucchinis using a box grater or a food processor. Once grated, place the zucchini in a large mixing bowl and sprinkle with salt. Sit for 10 minutes, then using either a clean kitchen towel or paper towel, squeeze out any excess moisture.
In a large mixing bowl, combine the grated zucchini, almond flour, grated Cheddar cheese, garlic powder, onion powder, oregano, salt and black pepper. Mix well until all the ingredients are evenly incorporated.
Preheat the air fryer according to the manufacturers instructions.
Take small portions of the zucchini mixture and shape them into small patties or fritters. You can use your hands, a large cookie scoop or a spoon to shape them.
Lightly coat the air fryer basket with cooking spray to prevent sticking. Place the zucchini fritters in a single layer in the air fryer basket, leaving some space between them for optimal air circulation. You may need to cook them in batches depending on the size of your air fryer.
Cook for the fritters for 10 minutes at 190C/380F degrees
Once the fritters turn golden brown and crispy on the outside, remove them from the air fryer. Allow them to cool for a few minutes before serving.
