Ingredients

  • ½ head red cabbage thinly chopped
  • 1 medium red onion chopped
  • 3 cloves garlic minced
  • 1 inch fresh ginger, grated
  • 2 tablespoons olive oil
  • 5 cups vegetable stock/broth
  • 1 tablespoon red wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Start by heating up 2 tablespoons of olive oil in a large soup pot over medium heat. Once the oil is hot, add your finely chopped onion and sauté for about 10 minutes until they become beautifully fragrant and translucent.
  • Add the minced garlic and ginger and cook for a further 2 minutes.
  • Add the chopped red cabbage and cook for another 5 minutes, letting it soften and become even more vibrant in color.
  • Add the vegetable stock and bring your keto red cabbage soup to a boil, then reduce the heat to low, cover, and let it simmer away for about 30-40 minutes, or until all those beautiful veggies are tender.
  • Add the red wine vinegar, salt and pepper.
  • Now, it's blending time. You can either use an immersion blender right in the pot to puree the soup until it reaches your desired creamy consistency, or if you prefer, transfer it in batches to a regular blender and blend until smooth. Safety tip: Let it cool a bit if using a regular blender, and don't forget to vent the lid to prevent pressure build-up.
  • Taste your soup and tweak the seasoning if needed.
  • Serve the red cabbage soup piping hot, and garnish with chopped fresh parsley for that burst of color and flavor. For an extra touch of creaminess, add a dollop of keto-friendly sour cream or a dairy-free alternative. And for some healthy fats and a delightful twist, don't hesitate to top it off with slices of creamy avocado.
