Ingredients

  • 10 oz broccoli florets
  • 16 oz cottage cheese
  • 4 oz Cheddar cheese, grated
  • 2 oz Feta cheese, crumbled
  • 3 large eggs, beaten
  • ¼ teaspoon nutmeg optional
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Preheat the oven to 180C/350F degrees, and lightly butter or grease a 9 x 13 inch casserole dish.
  • Add the broccoli florets to the baking dish.
  • In a mixing bowl, combine the cottage cheese, beaten eggs, Feta cheese, Cheddar cheese and seasonings.
  • Pour the cottage cheese and egg mixture over the broccoli, ensuring it's evenly distributed.
  • Bake for about 35-40 minutes until the top is golden brown and the casserole is set.
  • Let the casserole cool for a few minutes before slicing and serving.
  • You can garnish the casserole with fresh herbs like chopped parsley or chives for a pop of color and flavor.

Notes

Makes 6 servings.  We cut the casserole into 6 rectangles using a 9x13 inch rectangle baking dish.
Fresh or frozen broccoli florets can be used.
