Celeriac Fries

Easy low carb celeriac fries are a healthy vegetarian side dish.

Ingredients

  • 1 celeriac
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat the oven to 200C/400F degrees.
  • Slice the top and bottom of the celeriac off.
  • Peel the sides of the celeriac with a vegetable peeler.
  • Cut the celeriac in half, then slice into 1cm fries.
  • Place the celeriac fries into a medium bowl and cover them with olive oil and seasoning.
  • Place the celeriac fries on a parchment lined baking tray and bake for 25 minutes until golden. Flip the fries over after 15 minutes.
  • Serve immediately with a dip.
