- 2 large zucchini
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Dressing
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 clove garlic minced
- ½ teaspoon salt
- ½ teaspoon black pepper
To Serve
- 4 oz Feta cheese
- 3 tablespoons mint fresh
Preheat the barbeque grill or griddle pan to a medium heat.
Slice the zucchini diagonally into 1 inch slices and toss them in the olive oil and season.
Cook for 3-4 minutes on each side until charred and tender.
Makes 4 servings
Can be served warm or cold. Stores in the fridge in a sealed container for 2 days.
