Almond Butter Coconut Balls

Ingredients

  • 1 cup almond butter
  • ½ cup coconut oil
  • cup coconut, shredded I prefer fresh but desiccated works
  • 1 tablespoon cocoa powder unsweetened
  • 1 teaspoon vanilla extract

Instructions

  • Mix all the ingredients together and put into the refrigerator for 15-20 minutes to firm up the mixture
  • Remove and roll the mixture into small balls. Place them on a piece of parchment paper.
  • Dip the balls into shredded coconut or cocoa powder
  • Eat!

Notes

I didn't use any low carb sweetener but you may want to add some for your own taste. I would recommend powdered rather than granual.
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
