Ingredients

  • ¾ cup pumpkin puree
  • ¼ cup butter
  • 1 cup cream, heavy
  • ½ cup parmesan (vegetarian)
  • ¼ teaspoon nutmeg, ground
  • 3 garlic cloves peeled & finely chopped
  • ½ teaspoon salt
  • 10 sage leaves

Instructions

  • In a small saucepan heat the butter on a medium heat.
  • Add the sage leaves and cook until they are firm and crispy.
  • Remove the sage leaves and set aside.
  • Add the garlic to the saucepan and cook for 2 minutes.
  • Stir in the pumpkin puree and cream.
  • Simmer until the sauce has thickened.
  • Add the Parmesan cheese, nutmeg and salt. Stir until the sauce is smooth.
  • Stir in half of the sage leaves.
  • Serve with low carb noodles.
