Loaded radishes are cooked until golden, then covered with cheese and chopped onions for a tasty side dish.

Ingredients

  • 16 oz radishes
  • 3 tablespoons butter
  • ½ cup Cheddar cheese shredded/grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 green onions chopped

To Serve

  • ½ cup sour cream
  • 2 tablespoons chives or parsley chopped

Instructions

  • Trim the radishes and cut into quarters.
  • In a medium skillet pan on a medium heat add the butter.
  • Once the butter has melted, add the radishes and cook until golden, turning over regularly.
  • The radishes should take 15-20 minutes to cook depending upon size.
  • Season with the salt and pepper.
  • Cover with the grated cheese and chopped green onions.
  • Place under the broiler or bake in a hot oven for 5 minutes until the cheese has melted.
  • Serve with a dollop of sour cream in the middle and scatter chives/parsley on top.
