Baked Broccoli Patties

Easy broccoli patties are made with cheese for an easy low carb vegetarian recipe. Nut and coconut free too!

Ingredients

  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium egg beaten
  • 2 oz Cheddar cheese shredded
  • 2 oz Parmesan cheese shredded & vegetarian
  • ½ cup lupin flour
  • ¼ cup oat fiber
  • ¼ cup parsley chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat the oven to 200C/400F degrees.
  • Either steam or blanch the broccoli pieces until soft but not mushy
  • Place the cooked florets in a large bowl and gently mash with a fork.
  • Heat the olive oil in a medium frying pan and fry the onion and garlic until soft for 5 minutes.
  • Add the cooked onion, garlic with the egg, cheeses and parsley.
  • Mix and season.
  • Add the lupin flour and oat fiber and stir well to bind the mixture.
  • Form the mixture into patties. I made about 6 medium sized patties.
  • Place the patties on a parchment lined baking tray.
  • Bake for 15 minutes, then flip over and bake for further 10 minutes
  • Serve and enjoy!

Notes

Makes 6 medium patties at 4g net carbs each.
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
