Keto Eggplant Fries

Crispy eggplant fries have a garlic almond flour coating and are cooked in the air fryer for a delicious appetizer or side dish.

Ingredients

  • 1 eggplant medium sized
  • 2 medium eggs beaten
  • 1 cup almond flour
  • 1 tablespoon garlic powder
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Cut the stem and bottom off from the eggplant.
  • Slice into strips, about ½ inch thick (or thinner/thicker for your own preference)
  • Set up your dipping station with the beaten eggs in one shallow bowl. In another shallow bowl, mix the almond flour, garlic powder, oregano, salt and pepper.
  • Dip the eggplant sticks into the beaten egg, then into the almond flour mixture, ensuring that they are thoroughly coated.

To Air Fry

  • Place the coated sticks in the air fryer basket. Give a light spray of oil and cook at 200C/400F for 10-12 minutes until golden and tender.

To Bake

  • Place the eggplant fries onto a baking sheet covered with parchment paper.
  • Bake at 200C/400F degrees for 15-20 minutes
  • Serve with Marinara sauce (or sauce of your choice).

Notes

A serving is ¼ of the recipe and about 5 fries each being 6g net carbs a serving.  This will depend upon the size of the eggplant cut.
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
