- ½ cup whey protein powder
- ½ cup oat fiber
- 2 tablespoons ground flaxseed
- ½ cup psyllium husk powder
- ½ teaspoon salt
- 1 tablespoon baking powder
- 4 medium eggs
- 7 oz Greek yogurt
- 1 tablespoon apple cider vinegar
Preheat the oven to 160C/300F degrees.
In a medium bowl, mix the dry ingredients.
In a separate smaller bowl, whisk the Greek yogurt with the eggs until smooth.
Add the apple cider vinegar and continue to whisk.
Pour the wet mixture into the dry ingredients and stir until you have a dough.
Using damp hands, form the dough into balls and place on a parchment paper lined baking tray.
Bake for 25-30 minutes until the rolls are firm and golden.
Makes 8 small bread rolls
