Ingredients

  • 1 lb brown mushrooms sliced or halved
  • 3 cloves garlic sliced
  • 2 tablespoons olive oil
  • 1 medium roasted red bell pepper chopped

Marinade

  • ¼ cup olive oil
  • 1 teaspoon salt
  • 3 tablespoons parsley chopped
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon basil, dried

Instructions

  • Heat 2 tablespoon of the olive oil in a large pan or skillet on a medium heat and saute the mushrooms for 6-8 minutes until cooked.
  • Add the garlic and cook for 1 minute.
  • Add the roasted red bell pepper slices and cook for a further minute.
  • Remove from the heat and place the mushroom mixture into a large dish or bowl.
  • Whisk the marinade ingredients together.
  • Pour the marinade over the mushrooms and stir well.
  • Cover and place in the fridge to chill for at least 2 hours.
  • Serve with chopped fresh parsley or basil.
