Ingredients

  • 12 oz celeriac rice
  • 2 tablespoons butter or olive oil
  • 1 shallot chopped
  • 2 cloves garlic minced
  • 8 oz mushrooms, sliced
  • 1 cup vegetable stock
  • ¼ cup heavy cream
  • ½ cup vegetarian parmesan cheese grated
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • In a large skillet, heat the butter on a medium heat and sautee the chopped shallot for 3 minutes until softened.
  • Add the garlic and cook for a further minute.
  • Add the sliced mushrooms and cook until the mushrooms are tender.
  • Add the celeriac rice, stir through the vegetables and add the stock and seasoning. Cover and simmer for 5 to 10 minutes until the celeriac rice is tender.
  • Stir in the cream and parmesan cheese.
  • Serve with more grated parmesan cheese if desired.
