Ingredients

  • 8 oz paneer cheese cut into cubes or strips
  • ½ red bell pepper cut into strips
  • ½ green bell pepper cut into strips
  • 1 onion sliced
  • 1 medium tomato diced
  • ½ cup tomato puree
  • 2 tablespoons ghee

Spices

  • 1 teaspoon cumin seeds
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic minced
  • 1 teaspoon chili powder
  • ¼ teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • ½ teaspoon garam masala
  • 1 tablespoon lime juice this could be replaced with lemon juice

Instructions

  • In a large skillet or pan, heat the ghee on a medium heat.
  • Add cumin seeds and sauté for a few seconds until they start to splutter.
  • Add the onions and sauté until the onions turn translucent.
  • Add the garlic and ginger and cook for 2 minutes.
  • Stir in the spices and lime juice. Cook for 1 minute, stirring to coat the onion mixture.
  • Add the tomatoes and tomato puree to the pan. Mix everything well and let it cook for a few more minutes until the sauce thickens and the flavors meld together.
  • Add the sliced bell peppers and the paneer cubes. Cook for 3 to 4 minutes.
  • Serve with freshly chopped cilantro.
