Chili Stuffed Peppers

Bell peppers are stuffed with vegetarian chili, topped with cheese and baked for a delicious and hearty low carb dish. It's a great way to use leftover chili too!

Ingredients

  • 2 bell peppers
  • 1 cup TVP chili
  • ½ cup Cheddar cheese, grated

Instructions

  • Preheat your oven to 375°F (190°C) degrees.
  • Slice the bell peppers in half lengthways and remove the seeds and membranes.
  • Place the peppers in a baking dish.
  • Spoon the chili inside the bell peppers.
  • Bake for 15 minutes until the pepper is cooked and soft.
  • Add the shredded cheese on top and return to the oven to bake for a further 5 minutes until the cheese is melted and golden.
  • Serve and enjoy.

Notes

One serving is one pepper half baked.
