Chili Stuffed Peppers
Bell peppers are stuffed with vegetarian chili, topped with cheese and baked for a delicious and hearty low carb dish. It's a great way to use leftover chili too!

- 2 bell peppers
- 1 cup TVP chili
- ½ cup Cheddar cheese, grated
Preheat your oven to 375°F (190°C) degrees.
Slice the bell peppers in half lengthways and remove the seeds and membranes.
Place the peppers in a baking dish.
Spoon the chili inside the bell peppers.
Bake for 15 minutes until the pepper is cooked and soft.
Add the shredded cheese on top and return to the oven to bake for a further 5 minutes until the cheese is melted and golden.
Serve and enjoy.
One serving is one pepper half baked.
