- ¾ cup pumpkin puree
- ¼ cup butter
- 1 cup cream, heavy
- ½ cup parmesan (vegetarian)
- ¼ teaspoon nutmeg, ground
- 3 garlic cloves peeled & finely chopped
- ½ teaspoon salt
- 10 sage leaves
In a small saucepan heat the butter on a medium heat.
Add the sage leaves and cook until they are firm and crispy.
Remove the sage leaves and set aside.
Add the garlic to the saucepan and cook for 2 minutes.
Stir in the pumpkin puree and cream.
Simmer until the sauce has thickened.
Add the Parmesan cheese, nutmeg and salt. Stir until the sauce is smooth.
Stir in half of the sage leaves.
Serve with low carb noodles.
