Baked Broccoli Patties
Easy broccoli patties are made with cheese for an easy low carb vegetarian recipe. Nut and coconut free too!
Servings: 6 patties
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 medium egg beaten
- 2 oz Cheddar cheese shredded
- 2 oz Parmesan cheese shredded & vegetarian
- ½ cup lupin flour
- ¼ cup oat fiber
- ¼ cup parsley chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat the oven to 200C/400F degrees.
Either steam or blanch the broccoli pieces until soft but not mushy
Place the cooked florets in a large bowl and gently mash with a fork.
Heat the olive oil in a medium frying pan and fry the onion and garlic until soft for 5 minutes.
Add the cooked onion, garlic with the egg, cheeses and parsley.
Mix and season.
Add the lupin flour and oat fiber and stir well to bind the mixture.
Form the mixture into patties. I made about 6 medium sized patties.
Place the patties on a parchment lined baking tray.
Bake for 15 minutes, then flip over and bake for further 10 minutes
Serve and enjoy!
Makes 6 medium patties at 4g net carbs each.
The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
