Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion sliced
  • 4 cloves garlic minced
  • 2 jalapenos deseeded and chopped
  • 1 teaspoon chili powder
  • ½ head cabbage, finely sliced white or green
  • 14 oz tinned tomatoes
  • 2 cups cauliflower taco meat
  • 1 cup Cheddar cheese grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Heat the olive oil in a large skillet on a medium heat.
  • Cook the onions for 8-10 minutes until soft.
  • Add the garlic and jalapeno and cook for 1 minute.
  • Stir in the sliced cabbage and cook for 5 minutes.
  • Add the chili powder, cauliflower taco meat and tinned tomatoes. Stir well and season with the salt and pepper.
  • Remove from the stove and cover with the shredded cheese.
  • Cook in a preheated oven at 180C/350F degrees for 15 to 20 minutes until the cheese is bubbling.
  • Serve and enjoy!

Makes 6 servings
The cauliflower taco meat can be substituted with other keto vegetarian taco meat
The sliced cabbage will yield about 3 cups
