    Cauliflower Taco Meat is an excellent meal for vegetarians and vegans. It can be made into low carb and gluten-free tacos with so many veggie toppings piled on.

    This taco meat is made with cauliflower rice and has plenty of flavor from spices like chili powder, cumin and garlic powder.

    IS CAULIFLOWER HIGH IN CARBS?

    Cauliflower is surprisingly low in carbs compared to other vegetables like potatoes or corn. So if you're looking for an easy way to reduce your carb intake while still enjoying tacos, then cauliflower taco meat is the perfect choice. Plus, it's easy to customize with different spices and toppings so you can enjoy a variety of flavors in each bite!

    Cauliflower rice has just 3 grams of net carbohydrates per cup serving (about 107g) making it a great low carb alternative to rice.

    • The cauliflower rice can be made by yourself or store bought.
    • Tomato paste - check the sugar content as it will vary between brands.
    • Paprika - we use smoked paprika for a deeper flavor but regular paprika works well too.

    HOW TO MAKE CAULIFLOWER RICE

    Making your own cauliflower rice is very easy. Add cauliflower florets to a food processor and pulse until you have rice sized chunks. Alternatively, you can use a hand grater with a head of cauliflower.

    VARIATIONS

    You can make this vegan taco "meat" with the addition of chopped walnuts or mushrooms. The mushrooms should be finely chopped and cooked with the cauliflower for a hearty and spicy mixture.

    Change the spice mix to your own taste. Increase the heat with chopped jalapeno or add more chili powder. The addition of dried oregano is a great flavor too.

    STORAGE

    The cauliflower taco meat can be made ahead of using it in a recipe. Once cooled down or if you have any leftovers, store it in the fridge in an airtight container. It should last up to 4 days.

    WHAT TO SERVE WITH CAULIFLOWER TACO MEAT

    Serve this keto cauliflower vegan taco meat on low carb tortillas with a side of homemade guacamole or salsa. For a hearty dish add our low carb refried beans or use it in a recipe such as our cheesy cabbage casserole. Made loaded nachos, burritos or serve in a vegetarian keto taco bowl.

    Serve with a squeeze of lime juice for a slight citrus flavor.

    Can I use frozen cauliflower rice?

    Frozen cauliflower is great for this dish. Cook it straight from the packet, then add the spices.

    Can cauliflower taco meat be frozen?

    Once the spiced cauliflower is cooked and cooked, it can be frozen by storing it in either an airtight container or zip lock bag and place in the freezer. It should last up to 3 months.

    Can I make this with a different vegetable rice?

    If you are sick of cauliflower substitutions can be made with celeriac rice or palmini rice.

    Low-carb cauliflower taco meat is an easy recipe made from the humble vegetable. It serves as a great healthy taco meat alternative.

    Ingredients
     
     

    • 3 cups cauliflower rice
    • 1 teaspoon olive oil
    • 1 tablespoon tomato paste
    • 1 teaspoon chili powder
    • ½ teaspoon garlic powder
    • 1 teaspoon cumin
    • 1 teaspoon smoked paprika

    Instructions
     

    • Heat the olive oil in a large skillet or pan on a medium heat.
    • Add the cauliflower rice and sautee for 5-8 minutes until cooked.
    • Add the spices and tomato paste, stir through to mix thoroughly with the cauliflower rice and cook for a further 2 minutes.
    • Taste and adjust the seasoning for your own taste. You could add salt or black pepper too.
    • Serve or use in a recipe. Chopped cilantro goes well as a topping.
