Celeriac may not be the most attractive vegetable but it's one of the best low carb potato substitutes. Mashed, roasted or even raw it has a smooth nutty taste.
The outer skin may look like it will be a challenge to peel but if it is ripe the skin is not too bad to peel. A large sharp knife helps too! Once peeled the flesh is soft enough to cut into fries or chunk
Place the celeriac fries on a parchment lined baking tray and bake for 25 minutes until golden. Flip the fries over after 15 minutes.
