 Slice the eggplants into 1/2 inch slices

Slice Eggplant

Bake the eggplant until golden

Bake Eggplant

Place the eggplant slices in a baking dish and top with Marinara sauce.

Start the Layers

Add the Goats Cheese

Spoon the cheese mixture on top

Repeat the layers and bake
