A low carb sub sandwich recipe that has only 6g net carbs per sub. It is high in fibre and very filling as well as being easy to make.
Although I have a few low carb and gluten free bread and bread roll recipes I had a hankering for a sub sandwich so played around with my trusty coconut flour and psyllium husk powder. The submarine sandwich has many different names such as hoagie, sub, wedge or Italian sandwich. Many names, but it’s still the same thing. A long bread roll used as a sandwich.
- 1/2 Cup 56g Coconut flour
- 2 tablespoons Flaxseed flour/ground flaxseed
- 4 tablespoons psyllium husk powder
- 5 eggs separated
- 2 tablespoons apple cider vinegar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons olive or coconut oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 cup 250 ml boiling water
Preheat the oven to 180C/350F degrees.
In a bowl add the coconut flour, ground flaxseed, psyllium husk powder, baking powder, salt and seasonings. Mix well.
In another bowl, whisk the egg whites until stiff.
Add the egg yolks to the coconut flour mixture and stir thoroughly.
Add the olive oil and mix well. Then stir in the apple cider vinegar.
Gently fold in the egg whites.
Add the boiling water and gently mix. If the mixture looks a bit too soft, let it sit for at least 10 minutes to firm up.
Split the mixture into 4 sections and take one section. Using your hands, make it into a sandwich sub shape.
Place on a baking tray lined with parchment paper, and repeat for the rest of the dough.
Bake for 25-30 minutes until firm and golden.
Makes 4 subs

A revised and updated verion of my healthy bread recipe. It should be called healthy bread 2.0! I played around with the original recipe and came up with this delicious version which personally I think it a bit more “bread like” for a low carb bread mainly due to the addition of psyllium husk powder.
This paleo bread is great sliced and toasted. The Chief Taster has been enjoying a slice every morning with his scrambled eggs each morning. It seems to keep him going all morning as he has not been beating down the door at lunchtime with a ravenous hunger.
I added chia seeds to give the bread a bit of a healthy crunch, but also for the many nutritional benefits of these little wonders. This a great low carb bread full of all my favourite low carb flours and so easy to make too. You could add other flavours to this with herbs and spices and not be disappointed. My next plan with this is to probably add some seeds to it.
The joy that is pysllium husk powder gives this bread the dough like texture that is often missing from low carb breads. High in fibre and low in carbs, what more could you ask for!

This is the best low carb and gluten free bread so far! I found this recipe and tweaked it a bit with flaxseed but oh my…the best alternative to bread so far! We enjoy it toasted and as it is so dense in nuts and fibre you only need a couple of slices toasted to keep you going for hours. This is like a nice wholemeal bread and just so tasty!
