A lemon yogurt bowl makes a great low carb vegetarian breakfast. If you are looking for a protein breakfast that is not eggs, then a yogurt bowl is a good option.
This keto yogurt bowl has 28g protein due to the combination of the whey protein powder and Greek yogurt. I used an unflavoured protein powder, but a vanilla flavour would be just as delicious too.
Is Greek yogurt keto friendly?
Yogurts can be full of sugar and carbs but a plain yogurt can be suitable for a low carb diet. There are about 6g net carbs in a tub of Greek yogurt but there are now a few low carb yogurts in the stores too.
Greek yogurt is also a good source of protein for a vegetarian too.
How to make this yogurt bowl vegan
This is an easy recipe to make vegan but replacing the Greek yogurt with a soy or coconut yogurt. The coconut yogurt flavour goes well with lemon too.
Another vegan option is to use a soft tofu. Run in through the blender for a yogurt consistency.
Recipe Tips
Change the toppings to your own selection of chia seeds, nuts, other berries or seeds.
Home made sugar free lemon curd has been added to the yogurt but lemon juice could be substituted. I liked the creamy texture of lemon curd.
