    Sugar Free Almond Paste

    This sugar free almond paste is so quick and easy to make, you will never look for store bought again! Made with just 5 ingredients and ready in minutes.

    What's the difference between marzipan and almond paste

    If you don't look too close, marzipan and almond paste seem the same. There is a slight difference and just to add extra fun, it will vary depending upon what country you are from!

    In the USA, marzipan and almond paste are different due to the ratio of the almonds to sugar. In the UK they are much the same thing.

    I find a slight difference in texture but it may vary on the recipe. Marzipan should be easier to roll out, with almond paste being slightly coarser in texture but softer.

    However, these difference are for recipes with sugar, and when low carb sweeteners are used, they may act slightly differently and yield a slightly different texture.

    The Ingredients

    Just 5 ingredients are used to make this sugar free almond paste recipe. For the powdered low carb sweetener we used allulose.

    Make your own low carb powdered sweetener by running the granular sweetener through your coffee grinder.

    How to make sugar free almond paste

    This is just so easy you may want to make this every week! Place all the ingredients in a food processor and blitz until you have a paste. That's all there is to this.

    How to use low carb almond paste

    Almond paste can be used in place of most marzipan recipes but we made this specifically for a couple of recipes. Our low carb Almond Horns and Stollen recipes use almond paste.

    You could roll out shapes for decoration and colour them too. Perhaps something to top a party cupcake?

    A vegan almond paste

    As this recipe uses an egg white, it's not vegan. For a vegan version, try this low carb marzipan recipe. It will also store longer!

    How to store almond paste

    Keep the almond paste tightly wrapped in cling film and store in the refrigerator. It should last up to 10 days.

    To freeze, make sure that it is covered tightly with cling film and store in an air tight container or zip lock bag. It should last up to 4 months in the freezer.

    Recipe Tips

    If your almond paste is too crumbly, massage it with clean hands. The heat from your hands should loosen up the mixture.

    You can make your own almond flour to make this recipe. Grind up blanched almonds in a food processor. In all honesty, it takes a while but if you have a large batch to hand, make some almond paste too.

    An easy sugar free almond paste to use in desserts, baking or form into decorative edible shapes.

    Ingredients
     
     

    • 230 grams almond flour finely ground
    • 135 grams allulose or other powdered sweetener
    • 32 grams egg white should be one egg
    • 1 ½ teaspoons almond extract
    • ½ teaspoon salt

    Instructions
     

    • Place all the ingredients in a food processor and blitz until you have a dough like ball.
    • Remove from the food processor, wrap in cling film and store in the refrigerator until ready for use.

    Notes

    The recipe makes 14oz.  We have listed each serving to be 4oz but this will vary from use in recipes.
    The net carbs will be the total carb count minus the fibre count. Carb count excludes sugar alcohols.
