If you are a lover of the flavour combination of chocolate and peanut butter, a batch of these cookies are for you. The cookies are better the next day when they become slightly crispier on the outside and chewy and soft inside.
Is peanut butter keto?
Despite being a legume which is usually too high in carbs to be included in a keto diet, peanut butter is low in carbs. A great ingredient for savory or sweet recipes peanut butter only hasr 4g net carbs per 100g serving.
What can I use instead of peanut butter?
If you have a peanut allergy or find them too inflammatory this recipe can easily be made with other nut butters. Almond butter or sunflower seed butter would make a great replacement.
How to make Keto Chocolate Peanut Butter Cookies
This easy keto cookie recipe uses just one bowl and a few ingredients. If you have made low carb peanut butter cookies this is much the same but with the addition of unsweetened cocoa powder and an extra egg.
For the peanut butter we have used smooth but crunchy could be used. Try to use 100% peanut butter with no added sugar. Always check the label for added sugars and salt.
The low carb sweetener we use is monkfruit as it does not crystalize when cold. However, feel free to use the low carb sweetener of your choice as they should all work.
When baked the cookies will not appear firm and crisp and need to be allowed to cool before handling. They will firm up the next day if you can wait that long. Enjoy an experiment of cookie taste testing of baked that day versus the next day!
Can I make this recipe vegan?
You could make these cookies vegan but omitting the eggs. We would recommend that you add a tablespoon or two of coconut oil to keep the cookies moist.
How to store chocolate peanut butter cookies
Store these cookies in a sealed container in the fridge for up to 5 days. You can also freeze them for up to 3 months.
