What are the best mushrooms for stuffing

When making stuffed mushrooms, you'll want to choose mushroom varieties that are well-suited for stuffing and have a pleasant texture and flavor. While you can use various types of mushrooms, here are some popular options:

    1. White Button Mushrooms: These are the most commonly used mushrooms for stuffed mushroom recipes. They have a mild flavor and a sturdy cap that holds the filling well.
    2. Cremini Mushrooms: Sometimes called baby portobellos, cremini mushrooms have a slightly earthier flavor compared to white button mushrooms. They work well for stuffing and provide a deeper mushroom taste.
    3. Large Portobello Mushrooms: If you're looking for a meal-sized stuffed mushroom, large portobello mushrooms are a great choice. They have a substantial cap that can be stuffed with various ingredients, creating a hearty dish.

    Ingredients

A list of ingredients for mushroom risotto.
    • Mushrooms - we used Cremini mushrooms.
    • Cream cheese - softened for easy mixing.
    • Cheddar cheese - grated vegetarian Parmesan cheese can be substituted.
    • Spinach - we used defrosted spinach.
    • Walnuts - these could be substituted with pecans. Or omitted for a nut free dish.
    • Garlic Powder.
    • Salt & Pepper.

    Storage

If you have any leftovers, transfer the stuffed mushrooms to an airtight container. If you have a lot of mushrooms, you can separate them with layers of parchment paper to prevent them from sticking together.

Store the container in the refrigerator. Stuffed mushrooms can typically be safely stored in the refrigerator for up to 2-3 days.

    Reheating Stuffed Mushrooms

Reheating air-fried mushrooms is a good way to enjoy leftover or previously cooked mushrooms without sacrificing too much of their original texture and flavor. Reheat the mushrooms in the air fryer or oven.

    Recipe Tips

The removed mushroom stalks could be chopped and fried, and added to the stuffing mixture.

Gently twist or wiggle the stems to remove them from the mushroom caps without damaging the caps.

Fill each mushroom cap generously with the stuffing mixture. A slightly heaping mound of filling works well.

Can these stuffed mushrooms be baked?

If you don't have an air fryer, these vegetarian stuffed mushrooms can be baked in the oven. Stuff them as per the recipe card below, then place them on a parchment lined baking tray. Bake in the oven at 350F/180C degrees for 15 to 20 minutes.

    Ingredients

    • 10 Cremini mushrooms or white button mushrooms
    • ¼ cup defrosted spinach
    • 4 oz cream cheese, softened
    • ½ cup Cheddar cheese, grated
    • ¼ cup walnuts, chopped
    • 1 teaspoon garlic powder
    • ½ teaspoon salt
    • ½ teaspoon black pepper

    Instructions

    • Preheat your air fryer to 350°F (180°C) for about 5 minutes. This ensures that it's hot and ready for cooking.
    • Clean the mushrooms by wiping them with a damp cloth or paper towel to remove any dirt. Remove the stems from the mushrooms, and set them aside for later use.
    • In a medium mixing bowl, add the spinach, cream cheese, Cheddar cheese, garlic powder, salt, pepper and walnut. Mix thoroughly.
    • Stuff each mushroom cap with the cream cheese mixture. You can use a spoon or your fingers to do this, making sure to fill them generously.
    • Lightly spray the air fryer basket with olive oil to prevent sticking.
    • Place the stuffed mushrooms in a single layer in the air fryer basket, leaving some space between each mushroom to ensure even cooking.
    • Air fry the stuffed mushrooms at 350°F (180°C) for 8-10 minutes, or until they are golden brown and the cheese is bubbly and slightly browned.
    • Check the mushrooms occasionally to avoid overcooking. Cooking times may vary depending on the size of your mushrooms and the specific air fryer model you're using.
    • Once done, carefully remove the stuffed mushrooms from the air fryer using tongs or a spatula. Let them cool for a few minutes before serving.
    • Garnish with additional chopped parsley if desired, and serve your air fryer stuffed mushrooms as an appetizer or snack.
