    Carbs in Zucchini

    Zucchini is a popular vegetable choice for those following a low-carb or keto lifestyle due to its relatively low carbohydrate content. The net carb content of 1 medium zucchini would be roughly 4 grams.

    Ingredients

    All you need to make these zucchini fritters are a few simply low carb ingredients.

    • Almond flour - we use finely ground almond flour. Coconut flour could be substituted but reduce the quantity.
    • Zucchini - medium sized zucchini's.
    • Cheddar cheese - use a strong cheddar cheese but this could be replaced with Pepper Jack for a spicier fritter.
    • Seasonings - a mixture of onion powder, garlic powder and oregano. Other fresh herbs could be used too.

    How to Make Air Fryer Zucchini Fritters

    Cooking these zucchini fritters in an air fryer gives a crispy texture without the oil or greasy texture.

    Grate the zucchini

    Place the grated zucchini in a bowl with salt and sit for 10 minutes.

    Remove excess water from zucchini and place into a bowl with rest of ingredients.

    Form into patties and cook in the air fryer.

    Recipe Tips

    Ensure that the excess water is removed from the grated zucchini to prevent soggy fritters. We use a nut bag but a paper towel or cheese cloth can be used.

    Add a variety of herbs and spices to experiment with the flavors.

    If you don't have an air fryer, these fritters can be fried in a skillet or baked in the oven.

    Storage

    Ideally, these keto zucchini fritters should be enjoyed freshly made, but they will keep in the fridge for up to 2 days. Store them in an air tight container. To serve, reheat them in the air fryer to bring them back to a crispy texture.

    What to Serve with Zucchini Fritters

    Enjoy these zucchini fritters with a dip on the side. Try them with cranberry jalapeno dip, French onion dip or side of homemade ranch dressing.

    Ingredients
     
     

    • 2 medium zucchini
    • 1 large egg
    • ¾ cup almond flour
    • ½ cup Cheddar cheese, grated
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon oregano
    • ½ teaspoon salt
    • ½ teaspoon black pepper

    Instructions
     

    • Grate the zucchinis using a box grater or a food processor. Once grated, place the zucchini in a large mixing bowl and sprinkle with salt. Sit for 10 minutes, then using either a clean kitchen towel or paper towel, squeeze out any excess moisture.
    • In a large mixing bowl, combine the grated zucchini, almond flour, grated Cheddar cheese, garlic powder, onion powder, oregano, salt and black pepper. Mix well until all the ingredients are evenly incorporated.
    • Preheat the air fryer according to the manufacturers instructions.
    • Take small portions of the zucchini mixture and shape them into small patties or fritters. You can use your hands, a large cookie scoop or a spoon to shape them.
    • Lightly coat the air fryer basket with cooking spray to prevent sticking. Place the zucchini fritters in a single layer in the air fryer basket, leaving some space between them for optimal air circulation. You may need to cook them in batches depending on the size of your air fryer.
    • Cook for the fritters for 10 minutes at 190C/380F degrees
    • Once the fritters turn golden brown and crispy on the outside, remove them from the air fryer. Allow them to cool for a few minutes before serving.
