This delicious salad is a great way to enjoy star fruit, a low carb fruit that has a complex flavor and is sometimes misunderstood.
In this refreshing salad we have combined star fruit with cucumber and avocado in a simple salad dressing. As well as being delicious, they are a cute shape too!

WHAT IS STAR FRUIT?
Star fruit, also known as carambola, is a tropical treat but unlike many tropical fruits is low in carbohydrates with just 4.2g net carbs per 100g serving. It is lower in carbs than most berries too.
This tasty fruit is also an excellent source of antioxidants and has a light, tart taste like an apple. We use it in replace of pineapple in our low carb upside down cake.
SALAD INGREDIENTS
The cucumber in this salad combines well with the refreshing star fruit and we added avocado for it's great fat content and creamy texture. We didn't want any other ingredients to over power the star fruit as it has a delicate flavor.
For the lettuce we used a selection of baby salad leaves but baby spinach or chopped Cos lettuce make a great substitute. Any salad greens will work.
WHAT GOES WELL WITH STAR FRUIT?
If you want to make a salad with star fruit, you can add these other low carb ingredients to your salad (or replace the cucumber and avocado) with these:
- Blueberries
- Coconut
- Strawberries
STAR FRUIT CAUTION
A word of caution for those of you with kidney issues because star fruit has a high oxalate content, which is not good for the kidneys. They are also extremely toxic to dogs and cats too.
HOW TO MAKE STAR FRUIT SALAD
The starfruit edges need to be removed first with a sharp knife. Then remove the top and bottom of the fruit. Slice into about ¼ inch pieces.
Slice the cucumber, prepare the avocado and then mix the salad dressing. We used a lime and mustard dressing as the citrus flavors go well with the salad. Feel free to use the salad dressing of your choice.
RECIPE TIPS
The star fruit should be ripe and yellow in colour. If you have a green one, allow it to ripe on the kitchen counter for a couple of days before using.
Olive oil could be substituted for the avocado oil.

Star Fruit Salad
Ingredients
- 2 cups baby salad leaves
- 1 medium star fruit ripe and yellow
- 1 medium cucumber
- 1 medium avocado
Salad Dressing
- 1 teaspoon Dijon mustard
- 1 tablespoon Balsamic vinegar
- 1 tablespoon water
- ¼ cup red onion finely chopped
- 3 tablespoons avocado oil
- 1 tablespoon lime juice
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- With a sharp knife, slice the edges from the star fruit.
- Remove the top and bottom of the fruit and cut into ¼ inch slices.
- Peel the cucumber and slice.
- Remove the skin and stone from the avocado and cut into slices.
Mix the Dressing
- In a small bowl, add the dressing ingredients and whisk until smooth.
Assemble
- On a large serving place, layer the lettuce over the plate.
- Place the cucumber, avocado and star fruit over the lettuce.
- Drizzle with the salad dressing and serve immediately.
