    What is Daikon?

    Daikon, also known as white radish or Japanese radish, is a type of radish characterized by its large size, elongated shape, and white color. It is a popular vegetable in many Asian cuisines, including Japanese, Chinese, and Korean. Daikon radishes have a mild, slightly peppery flavor and a crisp, crunchy texture.

    Daikon radish is a low-calorie vegetable that is relatively low in carbohydrates compared to many other root vegetables. On average, daikon radish contains about 2-4 grams of carbohydrates per 100 grams of raw daikon.

    Daikon radish is a low-calorie vegetable that provides a variety of essential nutrients. Here's an overview of the nutrition you can find in a 100-gram (about 3.5 ounces) serving of raw daikon radish:

    Calories: 18 calories
    Carbohydrates: 4 grams
    Fiber: 1.6 grams
    Protein: 0.6 grams
    Fat: 0.1 grams
    In addition to its macronutrient content, daikon radish is a good source of several vitamins and minerals, such as Vitamin C, Potassium and Magnesium.

    Any seasoning that you prefer can be used for this keto fries recipe.

    • Daikon - Daikon radishes come in various sizes and shapes, but for most culinary purposes, choose ones that are straight and cylindrical, as they are easier to slice and work with. Look for daikon radishes that are firm, smooth, and free from any soft spots, blemishes, or wrinkles.
    • Olive oil - avocado oil or coconut oil can be substituted.
    • Seasoning - in addition to salt and pepper we used a lime chili spice mix but any spices work well.

    Peel the daikon and cut.

    Cut into ¼ inch sticks.

    Toss the sticks in seasoned oil.

    Place in the air fryer basket and cook.

    Storage

    Ideally, these low carb fries should be consumed freshly made. If you do have any leftovers, keep them in an air tight container in the fridge. Reheat them in the air fryer to bring them back to crispiness.

    Daikon Fries in the Oven

    If you don't have an air fryer, these low carb daikon fries can be made in the oven. Place the seasoned daikon sticks in a single layer on a parchment paper lined baking sheet and bake for 40 to 50 minutes at 220C/425F degrees.

    I have found that baking daikon fries in the oven can take a while and will vary from oven. Increase the baking time until the fries are cooked through.

    Seasoning Suggestions

    Daikon fries can take on a variety of delicious flavors with the right seasonings and spices. Here are some spice and flavor suggestions to enhance the taste of your daikon fries:

    1. Garlic and Herb: Toss your fries with garlic powder, dried oregano, basil, and thyme for a savory and aromatic flavor.
    2. Paprika and Smoked Paprika: Add a smoky and slightly spicy kick to your daikon fries by sprinkling them with regular paprika and a touch of smoked paprika.
    3. Cajun Seasoning: Give your fries a zesty, spicy twist by coating them in Cajun seasoning, which typically includes ingredients like paprika, cayenne pepper, garlic powder, and onion powder.
    4. Parmesan and Herbs: After baking, sprinkle your daikon fries with grated Parmesan cheese and fresh chopped herbs like parsley or chives for a cheesy and herby finish.
    5. Curry Powder: Dust your daikon fries with curry powder before air frying or baking to infuse them with a warm, aromatic, and slightly spicy flavor.
    6. Lemon Pepper: Season your daikon fries with lemon zest and freshly cracked black pepper for a bright and zesty taste.

    More keto alternative to fries

    If you enjoy potato fries there are a few low carb alternatives. Whilst nothing can really replace the potato for taste and crunchiness, these recipes are still tasty.

    Air fryer daikon fries are a healthier twist on traditional French fries, made by slicing daikon radish into fry-like sticks, seasoning them, and air frying them until they're crispy on the outside and tender on the inside.

    Ingredients
      

    • 1 large daikon radish
    • 2 tablespoons olive oil
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 1 tablespoon chili lime seasoning spice seasoning of your choice

    Instructions
     

    • Preheat the air fryer according to the manufacturers instructions.
    • Peel the daikon radish to remove the skin. Then, cut it into evenly-sized sticks, similar to the size and shape of traditional French fries. Ensuring uniform sizes will help the fries cook evenly.
    • In a large mixing bowl, add the olive oil, salt, pepper and seasoning.
    • Toss the daikon sticks in the seasoned oil and cover all thoroughly.
    • Arrange the seasoned daikon fries in a single layer in the air fryer basket. Make sure they aren't overcrowded to allow for proper air circulation. You may need to cook them in batches if your air fryer is small.
    • Air fry the daikon fries for about 15-20 minutes at 200C/400F degrees, flipping them halfway through the cooking time.
    • Once the daikon fries are golden brown and crispy, remove them from the air fryer and serve immediately.

    Notes

    Cooking times may vary based on the thickness of your fries and the specific air fryer model you're using. Keep an eye on them to avoid overcooking, as they can become too crispy.
