WHAT IS CELERIAC?
This vegetable may not be much to look at but once you have cut the knobbly skin away, you are left with a creamy root vegetable. It is also known as celery root and is great either raw or cooked.
HOW TO CHOOSE CELERIAC
When faced with a shelf of this gnarly vegetable, make sure the ball is firm and feels heavy. If any part of it feels soft, then put it down and search for a freshier bulb.
HOW TO STORE CELERIAC
Celeriac can be stored in the fridge or in a cool pantry. Just ensure that it is stored somewhere moisture free.

HOW TO MAKE GRILLED CELERIAC STEAK
We soften the celeriac slices before grilling to ensure that when grilled, the slices are soft and fluffy inside.
Slice the celeriac and parboil
Brush the slices with the mustard dressing.
Grill the slices on a BBQ or griddle pan
Serve with a herb sauce and chopped parsley

This easy celeriac recipe is delicious served with salsa verde or avocado pesto. Try this with a slathering of a green goddess dressing.
Recipe Tips
These celeriac steaks can be roasted in the oven after parboiling too. Place the seasoned slices on a baking tray and roast for 15-20 minutes.

Grilled Celeriac Steaks
Ingredients
- 1 celeriac
Dressing
- 2 tablespoons avocado oil or olive oil
- 1 clove garlic minced
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- With a sharp knife, chop the top and bottom from the celeriac knob and peel it. Cut into 1cm thick slices (should yield about 4)
- Parboil the celeriac slices for 10 minutes until tender.
- In a medium bowl, mix the oil, garlic, mustard and seasoning.
- Brush the celeriac slices with the seasoned oil and grill for 3-5 minutes on a medium heat for each side until they are golden and cooked through.
- Serve with salsa verde or a herb sauce.

I had some leftover celeriac from a different recipe, and it had been in the fridge for a couple weeks. I planned to grill some veggies for dinner last night and wondered if grilling the celeriac could be an option. Did a quick Google search and found your recipe. It was SO good, really tasty, and my husband enjoyed it too. I'll be making this often. The only thing I couldn't figure out was where the lemon juice comes in, so I didn't use it.
